
Lady Jo Tea Loaf

All of the dry goods used in this recipe are sourced from The Green Life Pantry, a link is provided below.
Ingredients:
250 g mixed dried fruit (e.g. raisins, sultanas, currants, chopped dates)
250 ml strong hot tea ( Lady Jo, Earl Grey or English breakfast can be used )
100 g soft brown sugar
1 large egg
225 g self-raising flour
½ tsp mixed spice (optional)
Pinch of salt
Optional Additions:
Zest of 1 orange or lemon
1 tbsp marmalade or honey (for glazing)
50 g chopped nuts (walnuts or pecans work nicely)
Instructions:
Soak the fruit
Put the dried fruit into a large bowl and pour over the hot tea.
Cover and leave to soak overnight (or at least 4 hours) until the fruit is plump and the liquid mostly absorbed.
Preheat oven
Heat your oven to 170°C (150°C fan) / 340°F.
Grease and line a loaf tin with baking parchment.
Mix the batter
Stir the brown sugar and egg into the soaked fruit mixture until well combined.
Sift in the flour, mixed spice, and salt. Mix until everything is just combined (don’t overmix).
If using zest or nuts, fold them in now.
Bake
Spoon the mixture into the prepared loaf tin and level the top.
Bake for 1 hour to 1 hour 15 minutes, or until a skewer inserted in the center comes out clean.
Cool & glaze (optional)
Let the loaf cool in the tin for 10 minutes, then turn it out onto a wire rack.
While still warm, brush with warm marmalade or honey for a glossy finish.
Serve
Allow to cool completely before slicing.
Serve plain, with butter, or a wedge of cheese — perfect with a cup of tea!
Storage:
Keeps well in an airtight container for up to 1 week, and the flavor actually improves after a day or two.
You can also freeze slices for up to 3 months.
